Delicious Chicken and Veggie Bowl

My family is bowl crazy right now!  It's one of their favorite dinners, and so easy to make.  In full disclosure, this chicken is so yummy it is almost dangerous, I can not stop eating it!  If you make a double batch of the chicken, you can use it on salads and in wraps during the week.  I love the beautiful colors in this dish and it's full of healthy antioxidants, phytonutrients, lean protein and healthy fat!  (The frozen Fire Roasted Corn and Brown Rice make preparing this dish even easier)

I usually put all the toppings in separate containers and allow my family to go through the line and design their own bowl.  It's a healthy dinner your family will love! 

Ingredients

  • 2 lbs Chicken

  • 1 teaspoon Garlic Powder

  • 1/2 teaspoon Onion Powder

  • 1 1/2 teaspoon Salt

  • 1 1/2 teaspoon Cumin

  • 1 1/2 Tablespoon Chili Powder

  • 1 1/2 Tablespoon Olive Oil

Toppings:

  • Tomatoes - Chopped

  • Fresh Cilantro - Chopped

  • Avocado - Chopped - Squeeze Lime over after chopping

  • Red Cabbage - Finely Sliced

  • Frozen Roasted Corn (I use Trader Joes) - cooked according to directions

  • Orange Peppers

  • Cooked Brown Rice or Quinoa

  • Lime

Mix all spices together in a bowl and set aside.  Slice chicken into small pieces and place in large bowl.  Toss chicken with spices and oil until completely covered.  Place in single layer on grill, or in a single layer on a baking sheet and place in oven at 400 degrees about 15 minutes until cooked through.  

Layer bowl with cooked rice or quinoa and top with veggies, sprinkle with course salt and a squeeze of lime, top with chicken. Can also be layered over a bed of spinach for a low carb friendly option.
