Taste of Summer Salad

There is nothing my family loves more in the summer than corn! This salad is not only super easy to throw together, but it is a real crowd pleaser. It can be used as a side and taken to any summer gathering or you can add grilled shrimp or chicken and create a delicious main dish!

Salad ingredients:

4-6 boiled ears of corn cut from the cob

1/2-1 English cucumber sliced

1 cup cherry tomatoes halved

bunch of fresh parsley chopped

bunch of mint chopped

Dressing ingredients:

1 tbsp olive oil

3 tbsp lemon juice

pinch of course salt

pinch of course ground pepper


Directions:

Combine all salad ingredients. Mix dressing ingredients and pour over salad. Cover salad and refrigerate for at least an hour, if possible. That’s all there is to it!
