Banana Bread Overnight Oats...not just for breakfast!

Overnight oats in a jar...there are so many posts on this breakfast recipe that I had to give it a try.  As with everything we do, I ask myself how I could make the recipe better.  How can I add protein, fiber and taste without adding sugar?  I wanted the perfect carbohydrate/protein/fiber combination.  Well, I think I've struck gold!  Premier Protein is always something I have in my pantry for a quick protein drink after my workouts.  Rolled oats, flax seed  and bananas are also pantry staples.  Truth be told, this has become not only a breakfast option, but a snack option and a dessert treat as well!  So, without further adieu, this is what I came up with:

Ingredients:

  • 1/2 cup rolled oats (not instant)

  • 1/2 mashed ripe banana

  • 1/2 cup vanilla premier protein

  • 1 tsp. flax seed

  • 1 chopped walnut (I just chopped one walnut and added as topping the next morning for crunch. Could used slivered almonds as well.)

  • 1/2 tsp. cinnamon

Directions:

Mix all ingredients in a bowl and then pour into jar.  Put lid on the jar and keep in refrigerator overnight (12 hours).  That's it!  So easy!  Come morning you've got the perfect breakfast ready and waiting. Eat it cold or warm it up in the microwave.

  • 3 g fat

  • 29 g carbohydrates

  • 25 g protein

  • 5 g fiber
