4 Healthy Tea Sandwiches - Perfect for a Brunch, Shower or Tea Party
As a mom of three girls, I love a good tea party! Tiny sandwiches, tea and anything fancy..."those are a few of my favorite things!"
Some of my favorite memories from when my daughters were young, were of our countless tea parties. Chances are pretty good, that if you have daughters, you have had a few tea parties yourself! A few months ago my mom and I went to a Valentine's Day Tea at a local restaurant, and while we had a delightful day together, I couldn't help but notice all the food was full of sugar. It got my mind working on how to make some of those tea sandwiches more healthy!
Whether you are pulling up tiny chairs to a tea party with your little one, serving pretty tea sandwiches at a baby or bridal shower, or celebrating your mom for Mother's Day - these yummy sandwiches are tasty and don't leave you feeling guilty after eating them! I think they are the perfect appetizer for a special brunch or party, but honestly, you can make them anytime at all! Who doesn't love baby avocado toasts?
Mini Avocado Toasts with Sunflower Seeds and Kumquats &
Avocado Toasts with Sundried Tomatoes and Feta Cheese
Ingredients
- Mini Cocktail Whole Grain Bread (I used Rye)
- 2 Avocados
- 1 Lime
- 4 ounces Feta Cheese (I used Low Fat Feta from Trader Joe's)
- 2 ounces Sundried Tomatoes ( I used Trader Joe's California Sundried Tomatoes in a bag)
- 3 Tablespoons Sunflower Seeds
- 1/2 pint Kumquats, thinly sliced
- 1 teaspoon Chili Lime Seasoning Blend
- Salt and Pepper to taste
Directions
Mash avocados in bowl. Squeeze juice from lime and stir in with Chili Lime Seasoning and salt and pepper. Spread over toasts (about 10 of each type). On half of sandwiches, place two Kumquat slices and top with a sprinkle of sunflower seeds. On the other half, top with sundried tomatoes and crumbled feta cheese.
Mini Cucumber Dill Cocktail Sandwiches
Salmon and Caper Cocktail Sandwiches
Ingredients
- Mini Cocktail Whole Grain Bread (I used Rye)
- 3/4 Cup Plain Greek Yogurt
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 1 Tablespoon Dried Parsley
- 2 Tablespoon Dried Dill - plus some to sprinkle on top
- Cucumber thinly sliced
- 3 ounces Salmon of your choice (I used Harry and David's Smoked Salmon)
- Capers
In a bowl, mix greek yogurt, garlic powder, salt, parsley and dill. Spread mixture over bread. on half sandwiches, top with salmon and sprinkle capers over. On other half, place a cucumber slice and sprinkle with dill.
