Turkey Gyro Meatballs..YUMMY!
My family loves chicken gyros from Skippys. It's something we can all agree on on those nights where everyone is running in different directions and I've had no time to plan or prepare anything. This recipe is a family favorite and is so easy to make, it is low fat/low calorie and it keeps us away from fast food! Give it a try!
Ingredients:
Joseph's Oat Bran and Whole Wheat Pita Bread
Meatballs:
2 lbs of ground turkey
1/2 red onion finely diced
1/2 cucumber finely diced (I prefer English cucumbers as they are less watery)
1/2 tbsp. garlic powder
1/2 tbsp. oregano
salt and pepper to taste
1/2 tbsp dill
Tzatziki Sauce:
1 cup Fage greek yogurt
1/4 cucumber finely diced
1/2 fresh squeezed lemon juice
1 tsp dill
1 tsp garlic powder
salt to taste
fresh parsley to taste (Optional, if you don't have it-no worries!)
Directions:
Mix all ingredients for meatballs in large bowl. Cover baking sheet with foil and spray with Pam. Use small scoop to make uniformly sized meatballs. Bake in 400* oven for 25 minutes. While baking, mix sauce ingredients in small bowl and place in refrigerator until meatballs are ready. We like using Joseph's Oat Bran and Whole Wheat Pita Bread to create our gyros. Place 2 meat balls in the pita bread along with some diced tomatoes and Tzatziki sauce.
That's all there is to it! The girls love helping me with this recipe and like serving it with a fruit salad. For under 400 calories, you get a delicious, low fat meal that the whole family will enjoy. The leftovers are also great in school lunches.
