Grilled Sausage Stuffed Hatch Peppers

It's Hatch Pepper season and everyone is going crazy for them!  These delicious sausage stuffed hatch peppers are are a healthy dinner that is also packed with protein.  It's so easy to prepare, cook and clean up too!  You may even want to try out different varieties of peppers once the Hatch pepper season passes.  Be adventurous - try different types!  

I almost always have coucous, brown rice or quinoa left over in my refrigerator, so I would usually use one of those for the filing, but if you don't have anything pre-made, whole wheat couscous cooks super fast and is so easy to make!

Grilled Sausage Stuffed Hatch Peppers

Ingredients

  • 1 lb Turkey or Chicken Mild Italian Sausage
  • 1 Cup Tomato Sauce (I used Trader Joes)    
  • 2/3 Cup Cooked Whole Wheat Couscous (left over quinoa or brown rice can be substituted)
  • 1/2 Cup Lite Mozzarella Cheese
  • 1 teaspoon Italian Seasoning
  • 6 Mild Hatch Peppers 
  • Optional - 1/4 teaspoon Red Pepper Flakes  

Spray Dutch oven with cooking oil, and cook turkey or chicken sausage until brown, breaking apart while cooking.  Meanwhile, cook couscous according to directions on box, once cooked, measure out 2/3 cups (2/3 cup cooked quinoa or brown rice can be substituted).  After sausage is cooked, remove from heat and add tomato sauce, mozzarella cheese, couscous, Italian seasoning, and if desired, red pepper flakes (we only had mild hatch peppers available so I added the red pepper flakes for extra spice).  

Remove stems from peppers and cut lengthwise.  Remove seeds and evenly divide the sausage mixture among the 6 Hatch Peppers, stuffing inside the peppers.   Cut aluminum foil into squares and spray with cooking oil.  Wrap each pepper in foil and place on medium-high heat, seam side up.  Cook 20 minutes until peppers are cooked through.  Remove from heat and be careful when opening packets.
