Moroccan Carrot Salad
I am a fan of Mediterranean food! I love it all! I am crazy about the mix of fresh herbs and spices, and the fresh ingredients. When you eat healthy, and remove a lot of the unnecessary fat and sugar, replacing them with fresh ingredients and lots of flavorful spices, you really don't miss the unhealthy ingredients at all!
This Moroccan Carrot Salad is perfect for picnics and cook outs. It has a unique blend of fresh herbs like mint and cilantro, mixed with spices like cinnamon and paprika - and the result is a delicious heathy salad! Carrots are loaded with healthy nutrients like beta-carotene, biotin, fiber, and they have a low glycemic index. Carrots are a powerhouse of antioxidant nutrients!
At our last cookout, I made this salad, along with our Superfood Citrus Quinoa Salad and a ton grilled veggies for the side dishes! No need for macaroni or potato salads loaded with calories and fat! The beauty is that once you get used to eating fresh and healthy recipes, you really don't miss all the old foods, and actually crave the fresh taste of healthier foods!

Moroccan Carrot Salad
Ingredients:
- 1 Pound Carrots, peeled and coarsely grated
- 1/2 Cup Fresh Mint - chopped
- 1/4 Cup Italian Parsley - chopped
- 1/4 Cup Fresh Cilantro - chopped
- 1 teaspoon Smoked Sweet Paprika
- 1 teaspoon Cumin
- 1/4 teaspoon ground cinnamon
- 2 Tablespoon Olive Oil
- 1/4 Cup Fresh Lemon Juice
- 1 Tablespoon Fresh Lemon Zest
- 2 Large Garlic Cloves - minced (or 3 small)
- Salt and pepper to taste
Directions:
In a large bowl, grate carrots and add fresh herbs. Toss the remaining ingredients into salad and season to taste with salt and pepper. Serve chilled or at room temperature.
