Easy Summer Bean Salad
I recently visited my mom and she is doing some yummy recipes using beans. Getting plant based protein is a definate win in my book, so we’ve been trying to get creative with different ways of incorporating beans into our diet. To call this a salad recipe is a bit lofty, truth be told. All you are doing is opening some cans and adding a few store bought items and tada! You’ve got a delicious, low fat, protein packed summer bean salad. My kind of recipe!!! It’s a great side for any menu and an easy go to when you are asked to bring a salad to a BBQ or summer gathering.
Ingredients:
1 can of black beans drained and rinsed
1 can of chick peas drained and rinsed
chopped fresh parsley to taste ( I like to add a lot!)
1/2 a diced red onion
2 tbsp of Panera poppyseed dressing (only 25 calories/no fat/4 g sugar….delightful!)
*fun option: I love to add a cup shelled edamame to this recipe as well!
Directions:
Combine all ingredients in bowl. Cover and refrigerate for about an hour before serving. I also make it up ahead of time to eat as a snack during the week. It couldn’t be any easier and it really is a nice way to get some protein into your diet.
