Healthy and Low Calorie Greek Yogurt Topped Sweet Potatoes

With Thanksgiving fast approaching - we wanted to share a healthy alternative to the sugar and fat filled sweet potato casserole.  If you are watching your weight, Thanksgiving can be hard to navigate, and it's wise to have at least a couple of healthy dishes available for you to mix in with your other family favorites.  Here is a yummy alternative that will satisfy your sweet cravings, but not blow your healthy eating plan.  

I got the recipe from my daughter, who has a healthy eating blog geared toward college aged girls called donut dreaming.  It's a simple recipe to whip up for any time of the year, not just the holidays!  

Healthy and Low Calorie Greek Yogurt Topped Sweet Potatoes

Ingredients:

  • Roasted Sweet Potatoes

  • 3/4 - 1 Cup Greek Yogurt

  • Chocolate PB2

  • Cinnamon

  • Stevia with vanilla optional (just a drop or two)

  • Strawberries optional

Roast Sweet Potatoes at 350 degrees for 1 hour or until cooked through.  Mix together greek yogurt and PB2 to taste.  Mix in a drop or two of stevia if desired.  Top sweet potato with sliced strawberries and sprinkle with cinnamon.
