My family loves soup!  We have several recipes that we enjoy regularly, but this one has been on our favorites list for a long time.  Over the years, I have made changes, making it a little "cleaner," but the slightly creamy base still makes it seem more rich than the calorie count reflects.  The evaporated skim milk is the secret ingredient that adds the creaminess.  Just don't make the same mistake I did once...I accidentally added SWEETENED evaporated skim milk!  Ugh, what a disappointment!  I have not made that mistake again.  

Since I've fallen in love with my pressure cooker, I often make this recipe in the pressure cooker, cooking the chicken and making the soup in no time at all.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 Garlic Clove
  • 1/2 Cup Onion    
  • 1 Cup Celery - chopped
  • 1 Cup Carrots - chopped
  • 2 Tablespoons Whole Wheat Flour
  • 1/2 teaspoon Poultry Seasoning
  • 1/2 teaspoon Oregano 
  • 6 Cups Chicken Broth
  • 2 1/2 Cups of Chicken - shredded
  • 1 Can of Evaporated Skim Milk 
  • 4 ounces Whole Wheat Pasta Noodles
  • Salt and pepper to taste

Heat oil in Dutch oven and toss garlic until golden, add onion, celery, and carrots.  Sauté until tender.  Add flour and seasonings and stir until heated through.  Pour in broth and bring to a boil, stir in noodles and chicken, and reduce heat and simmer until noodles are tender.  Pour in evaporated skim milk and heat through, season with salt and pepper to taste.
