Tapas Grilled Shrimp Tacos - Healthy and Low Calorie
This is one of our go-to weeknight meals! We have a local restaurant that we love that makes wonderful tapas style tacos, and the shrimp taco was one of our favorites! I decided to make my own knock-off shrimp taco and my family loved it! It has been a staple ever since! The recipe is simple and it is so fast to make. I usually keep all of the ingredients on hand in case I need to make it on a busy night. The key is having fresh cilantro and limes on hand!
Tapas Grilled Shrimp Tacos
1 lbs Shrimp - peeled and deveined (seasoning below)
1 avocado - sliced
3/4 cup greek yogurt
1 - 2 limes
cilantro - 1 bunch fresh chopped
canned chipotle peppers to taste
corn or whole wheat tortillas - some store carry small tapas size tortillas that work great for this.
Cut Avocado into slices and drizzle with lime and season with salt and pepper. Mix greek yogurt and canned chipotles to taste. Season shrimp with seasoning mix below or your own favorite seasoning, and grill until cooked through. Chop shrimp coarsely and toss in lime juice and chopped cilantro. Layer shrimp on taco, add a layer of chipotle yogurt, and top with an avocado slice.

Shrimp Seasoning
1/2 teaspoonChili Powder
1/2 teaspoon Garlic Powder
1/2 teaspoon Oregano
1/2 teaspoon Cumin
1/2 teaspoon Salt
1/4 teaspoon Smoked Paprika
1/4 teaspoon Cayenne
Mix ingredients together and toss with shrimp.
I sometimes use seasoning that can be ordered from The Spice House located in Geneva Il. It is faster than mixing your own and I actually use these two seasonings on almost everything!
